Camping meal suggestions for Mini Max

Going camping (car camping) with my father in a few months. We used to do this when I was growing up and hope to do a few more times before my old man gets too old to sleep on the ground in a sleeping bag. He has and old Coleman camping stovetop but it's likely buried under a ton of stuff in his basement. I am just going to bring my Mini Max. I need some suggestions for some easy cooks that I can prep and store in the cooler. Just two nights.

Decades of camping has taught me two things.
1) Do what you can in the comfort of your kitchen. Prep is key.
2) Go simple.
A rotisserie chicken frozen and reheated over a campfire spit is filet and lobster when you've been camping two days.
Dont spend hours messing with food.
Dinners
Steaks
spatchcock chicken
pre Patty burgers and freeze then thaw and cook
premade kebabs (beef)
ABTs premade and frozen
precooked ribs that just need sauce and reheat
wings
And there is a reason S'mores are still around! If you want a twist load a waffle cone with mini marshmallows, chocolate chips, some fruit, and wrap in aluminum foil with a puff on the top. Open and it looks like an ice cream cone but a smore

Costco choice filet mignon, wrapped in bacon, inverted cgs cgs woo with onions and mushrooms up top, also pre made 2x baked taters and they were heated up on the top
Maybe one of the new camp meals ever. Get a DD lodge 5 qt if you want to make biscuits, chicken or fish when youre with pops. Filet mignon in mm at campsite is about as awesome as it gets....

Don't knock that old Coleman - you may still want that for tea or coffee in the morning or hot water to do your dishes.
When we go camping one of our first two dinners are sausages, peppers, and onions in foil packs. You can do all the prep at home and stick the foil packs in a ziploc bag in the cooler. Can be as quick as 10 minutes with precooked sausage.
Bagged salads are super easy sides, and so is a good loaf of bread, presliced. You can have it straight your first night, and then toast in the MM on your second night.LBGE

I always like cook Flank Steak. I season it up before I leave and cooks fast. Asparagus is always good also. with only 2 days you could made some potatoes before you leave and reheat. I like cutting up potatoes, sweet onion, Red and orange peppers, seasoned with a little pepper, garlic powder and salt. A family favorite and would reread easy in cast iron pan.
