What's a good model of shears that l'll cut chicken and turkey bones no problem for spatchock? I owned a pair of tinsmith pliers that worked great but were overkill and hard to navigate through the meat.

Son has pair of AMCO shears, designed for turkey so chicken is easy. I have a set from Lee Valley I use for chicken, the big chef knife comes out for turkey.Delta B.C. - Whiskey and steak, because no good story ever started with someone having a salad!

I use a Wusthof 10" serrated bread knife. Never tried a turkey, but it works well on chicken. Easier to clean too.
I hate it when I go to the kitchen for food and all I find are ingredients!

I just use a pair of kitchen shears. Not sure of the brand - either Oxo or Kitchen Aid I think.

Any decent sharp and substantial knife or kitchen shears will take care of the chix. I use a sharpened hatchet on turkey (no adult beverages before this gig) and it makes it quite easy. At some point the hand-eye coordination will necessitate heavy duty shears for the turkey. But entertaining right now. fWIW-Louisville; Rolling smoke in the neighbourhood. I second the messermeister. Good heft, solid product, all stainless steel. I've had mine for years.DoubleEgger said:I've gotten good use out of my Messemeister

I've gotta find my tinsmith sheers. They cut those bones like paper.

I've used these Wusthof kitchen shears for years. They cut through a chicken very easily.

LOL - I bet my 30+ year old CUTCO shears would still cut duct tin if I wanted to try and they came "free" - guess one of us will probably die first so we will never know if your "KitchenAid's at 1/10th the price" of my FREE CUTCO's was the better deal or not!HeavyG said:

A "free Cutco" is just like "free shipping" - doesn't really exist.RRP said:

Fine. I already knew I couldn't win such a pissin contest with you, but I was just trying to say my 30+ year old CUTCOs are still great! How good the current ones they sell are, or how much they now cost when bought separately I have no clue.HeavyG said:

Have a pair of J A Henckels shears that have dispatched a number of bird spines.
Price is good as well

Mine cost $11 so right about 1/10th the list price of the Cutco "Super Shears as listed on their website @ $112.
Serious question - you stated that your shears "would still cut duct tin" - did you really do that at one time with your shears or were you just being hyperbolical?“Reality is that which, when you stop believing in it, doesn't go away.” ― Philip K. Diçk -
I use Shun kitchen shears for chicken. They cut through pretty easily. For turkey I use hedge clippers (like I use when doing the lawn).
-
No - I was just being a smart ass! Actually I had a pair of cheapies that were advertised as being able to cut a penny in half. I ruined them trying to do so. I didn't have the wrist strength so I put one handle in a vise and used a hammer. They twisted and then bent! No way would I do that to my CUTCOs!HeavyG said:

I've got 3 kitchen shears. 2 of them suck. I think the Kitchen Aide is the good one.

Sharp chef's knife has given me best results, plus its easier to clean than shears...

That's one technique. I've also seen folks that just stand the chicken vertically, neck down and just run the knife straight down and take out the backbone with the one cut.nolaegghead said:Here's how to spatchcock a chicken with a knife:

Many ways to skin a cat (so to speak).
