Brisket Time

My Buddy @bgebrent gave me Sams BBQ-1 Cow Dust Rub at Lakefest and wow was this rub a hit. Friday night I put on a 12lb Prime Packer Brisket from Pattons Meat Market. I wet aged it for 2 months in the meat fridge, trimmed the hard fat and heavily seasoned it with Cow Dust. I put the flame boss on the large, loaded the egg with carbon del sur lump and mesquite chunks for smoke. Put the brisket on at midnight, at 7:30 meat temp was 175, I wrapped with pink butcher paper then at 10:30 the meat temp was 193 and probed like buttah. It went into the cooler wrapped in towels. Sliced at 3:00, this brisket was fantastic, Brent this rub was the bomb everyone commented on the bark and what a great flavor it had, they all had to see the jar the rub came in. Brisket success!

    Thing of beauty right there.  As you note, that is a great bark.  Congrats on the cook and eats.  Nailed it.
    Louisville; Rolling smoke in the neighbourhood.  Life is too short for light/lite beer!  Seems I'm livin in a transitional period. CHEETO (aka Agent Orange) makes Nixon look like a saint.

    Fantastic cook there Jim!  Glad you and your guests liked the rub.  @DoubleEgger turned me onto it a while back.  It's legit.

    Michael, if it will not be much of a problem, can you get a bunch of those? I will send whatever you need to do so. Just makes sense, knowing that you got me leaning on you now for smoking wood and cow dust.
    Why don't you come up here and cook my brisket too? LMFAO.
