Turbo Rib Timing - Help Needed
HofstraJet
Posts: 1,172
So my guests decided this morning that they want ribs.
I went and found a rack of St. Louis, baby back, and regular ribs (apparently the 4th is not the day to shop for ribs - two stores were out).
My question for the group is how do I adjust timing for the three different types? @Mickey calls for 100 minutes for baby back. What's the adjustments for the other two types?
Thanks!

It really depends more on the thickness of the meat than anything. I've had thin spares cook in the same time as average baby backs. I've had thick baby backs take a long time.
With that said, I wouldn't expect more than 2 hours, 10 minutes for about any rack at 350.
I usually just let my egg settle at something over 300 (my egg seems to like 325) and then start checking for doneness (toothpick test) at about 90 minutes and every 10 minutes thereafter.
At turbo temps make sure you have a drip pan that is spaced off your platesetter to minimize radiant heat from below and that it covers the entire silhouette of the ribs.XXL BGE, Karebecue, Klose BYC, Chargiller Akorn Kamado, Weber Smokey Mountain, Grand Turbo gasser, Weber Smoky Joe, and the wheelbarrow that my grandfather used to cook steaks from his cattle

Salado TX & 30A FL: Egg Family: 3 Large and a very well used Mini, added a Mini Max when they came out (I'm good for now). Just given a Mini to add to the herd.

4th must be when everybody does some cooks! Costco was out of prime packers... I got to sams club and there was only one left!
And I just about cleared out their pork butts.
I haven't done turbo... happy cooking. -
