Btw- i love gogol bordello and have seen them twice. We could probably hang out and manage to have a good time. You could show me how great barkless brisket is and i could wear you out telling you how nobody down here does it like that.

Okay- I like briskets just like I finish 'em-nekked-no sauce that is. The remainder of thoughts on this topic are best left off-line.
I am tempted to start a pro's and con's thread regarding burnt ends but that could be like pouring gasoline on a fire. Save for another day.Louisville; Rolling smoke in the neighbourhood. Life is too short for light/lite beer! Seems I'm livin in a transitional period. CHEETO (aka Agent Orange) makes Nixon look like a saint. -
Theres a bbq joint close to us in hot springs, AR and their sauce is wonderful. Kinda sweet but spicy. Called mcclards. I LOVE it on brisket. Probably my favorite bbq meal is brisket sandwich with that sauce and sweet pickled jalapenos.The Cen-Tex Smoker said:
