Newbie's first brisket

Pretty new to the BGE but having a lot of fun. I'd consider myself a pretty advanced home chef and griller.

Bought a full packer from Snakeriver. Trimmed a lot of fat and rendered out two cups of nice white beef fat! That made a good basted fried egg!

Smoked with Fogo lump and about 4 hunks of oak. Tried for steady temp of 260°, stayed pretty close to that with some ups and downs. Went on stabilized fire about 9:45pm, checked and played often, remote thermostater woke me up at 5:30am at 165°. Wrapped in butcher paper and returned it to the BGE. About 4 hours later hit 203°. Took a teeny bite and passed out groaning with pleasure

I did the foil/towel/cooler for a few hours, sliced at 1pm for lunch. I knew it was a win when my 14 year old food-picky son said "Dad, that meat tastes so good!"

    Welcome aboard and continue to enjoy the journey.  If you have spent any time here you will know that many will say, "pics or it didn't happen."  I'm not in that crowd but you are alerted.
    BTW- jumping into the deep end with SRF.  I think their briskets are definitely worth the $$.  The only other protein I buy from them (and only infrequently) are some of their steak packages just to make sure all is right with the cattle industry  ;)

    Hi Tim...my BGE is a large, I also have a Fire Magic Magnum, 3 burner plus 2 side burners. I'm keeping it because it's great for storing BGE accessories ;)
