Met some cool people and left just stuffed as a tick. It's the second year we've held the event, and looks to be growing in popularity already. Hopefully this gets bigger each year.

I can't remember where I found the recipe, but it's not totally mine. If it looks familiar to someone, please, by all means credit that person!. It might be from the BGE website. The reason I say that is because there are hyperlinks in my recipe. And, there is a Fahrenheit/Celsius portion. Clearly that's not of my own creation. Haha! Either way, It's a favorite of our family
Sometimes I do chuck roast instead of sirloin. The only difference is that sirloin I'll cook to 130 whereas chuck roast I'll take up to 160. The rest stays the same.6 slices bacon
2 tablespoons vegetable oil
1 large onion, chopped
1 large green pepper seeded and chopped
4 cloves garlic crushed
1 small jalapeno, seeded and diced
1 -28 ounce can diced tomatoes
2 cups low salt beef broth
2 cups water
1 -12 ounce can beef consommé
¼ cup chili powder
2 tablespoons ground cumin
1 tablespoon brown sugar
1 tsp black pepper
4 cups grilled or smoked seasoned sirloin (see below)
1 -15 ounce can of dark kidney beans, drained
1 -15 ounce can pinto beans, drained
Instructions
Rub 1.5-2.0lb sirloin with equal parts salt, pepper and garlic. Cook indirect at 250-275 until an internal temp of 130. Remove from Egg and let cool. Dice into 3/4” chunks.
Preheat a Dutch oven in the EGG at 350°F/177°C over direct heat.
Add the bacon and cook until crispy, remove. LEAVE THE BACON FAT!
Add onion, green pepper. Cook until soft.
Add garlic, cook a few more minutes.
Add the tomatoes, jalapenos, broth, water, consommé, chili powder, cumin, brown sugar and pepper. Mix well and bring to a simmer.
Add the beef and return to a simmer. Cook one hour.
Add the beans, chopped bacon
Cook another 30 minutes.

Lori (my wife) and I were there with/competing against Sam and Zach today and they killed it! All of you out in Egg Land could not hand select a finer young man to have won that Mini Max! It's really cool to see a kid that is so into cooking. I look forward to seeing him for the next ?? years that I'm able to do this! I gave him my competition steak recipe and he'll probably be taking me to the wood shed in a couple of years!
On a side note, I'd like to invite any of you Eggheads that want to have some fun, meet some great tasters and cooks to come out and cook next year. This is our second year and we'd like to grow this event! If you're in the Midwest it would be worth your drive to come up and participate. The down side is that Zach will have a whole year to practice!
