Flat iron Sunday cook, while soaking up the Masters...

Had a busy week and weekend with travel and tailgating (I mean college baseball). Finally a chance to at least sear a piece of meat. I hit the beef with some coffee rub, and cooked to medium rear.

I spent part of the afternoon at the state farmers market,....the annual spring guardian show. We purchase our annuals there each year, and enjoying looking and talking to all the growers. Lot of pressure, wife is out of town. While there...I purchased a bag of white oak barrel lump from a business that makes charred oak barrels.
This is made in Bamburg ......a small town in the low country of South Carolina. I added a few chunks to my lump, and wow what a surprise.
......I almost forgot....the money shot.

Hope you all had a great weekend. Thanks for looking

I'm amazed at how many people on here eat their meat so rare.
Still, it looks like you did a great job. I would eat it but I would love to have a little less pink. I like a little pink but not that much.Marshall in Beautiful Fruit Cove, FL.

So Ive heard. But I still find rare doesn't suit me. I have eaten meat rare but prefer meat medium rare.Jeremiah said:@SaintJohnsEgger that's a tri tip. It's supposed to be rare.Marshall in Beautiful Fruit Cove, FL.

I always know mine is too rare when it gets up off the plate and walks away before I can get my fork in it.theyolksonyou said:

Beautiful Robin.

His flat iron is true MR. Warm red center by definition. More "pink" is true medium. FWIW.SaintJohnsEgger said:

Provided great flavor. I added a handful to my Rockwood....I was surprised....especially cause I grew up in Hampton. I been through Bamburg many times.....the bar was set low.F3DAWG said:That looks great! What did you think of the white oak charcoal?Ellijay GA with a Medium & MiniMax

She looks disappointed. Needs a home with a MD that works part time.
