Cracked Back No-Can Chicken

Really trying to dial in my chicken game here today. Mixed a few techniques together in this one. Saw APL's recipe for cracked back chicken and blended it with a salt-only dry brine under the lifted skin of the yardbird, sitting on a beer can chicken stand. I broke the back of the intact bird and then stabbed and twisted the knife in him. It's now 10am and the skin in drying in the fridge until seasoning and indirect grilling at about 350-400. Will see how this works.

I like much of what APL suggests. Tried this without spending days on the sauce, the overall result was good. Spatchcocking was easier and provided comparable results. Be interested in your thoughts.
I used a 10 inch Lodge skillet for the cook in a 400º indirect egg (or so my recipe notes say I did as I really don't recall).

Thanks for sharing!  I love APL recipes, I didn't realize that Charred and Scruffed was newer than Serious BBQ.  Just ordered.  My Copy of SBBQ is in tatters...  Always love trying something new.  I will be watching for your results...

Not doing the Sauce. Just rubbed with Canola Oil and mix of generic seasoned salts and BBQ rubs. Egg is getting stabilized at 400 indirect. About ready to lay on. A chicken on an egg. Just realized that.

Turned out pretty good. Breast moist. Skin crispy but could have been even crispier.

I crack the backs on my rotis'd birds, let the drippings roast the veg in the drip pan, solid technique.  Lang is in my top 5 with Mallmann, Pepin, Bayless, Bastianich(Lidia).
