What a hassle to find decent Philly Meat. Seems like a high quality offering might be a good seller. Just a thought....not sure if others here would purchase, but know that I would. Ha.....its great outdoor cooking time here in the south. :)

Do you have an H-Mart nearby?  Mine have SRF lifter meat (http://www.beeffoodservice.com/recipecut.aspx?id=253) in the meat case as a standard item.  I usually use for stir fries on a griddle or wok, but it would probably make great cheese steaks.

Sliced thin Brent? No they don't. I would pay for the convenience of sliced portioned items. I can get hamburgers locally....but I also like to purchase the SRF burgers from time to time..... ;)

Just my $.02 but I wouldn't pay SRF prices for cheesesteak meat.  Get a choice grade boneless ribeye. Partially freeze it, then slice it thin. EZ-PZ.

Which came first the chicken or the egg?  I egged the chicken and then I ate his leg.

Respectfully, I struggle with this. Slicing with a knife? If I had a slicer, I would have no issue. Just don't think i can get a consistently thin cut.....or would require more effort than I would be willing to make for a larger group of tailgaters.

A slicer would definitely be easier.  I just use a knife.  I found my brisket slicing knife works best.  I have an electric knife but I find that the brisket slicer is far superior for this or any other slicing.

I will be honest though- I have only done this for serving 4-5 people not a large group. I have heard that the butcher at the grocery store might do this for you on a slicer.  I am not sure if the butcher has a slicer or if this must be done on the deli slicer. Perhaps with a couple of days notice they wouldn't mind.

I'm glad I'm not the only one who struggles with this.  It sounds so easy to slice the steak thin, but it's harder than it seems.  Or at least to me it is.

Get a decent 270mm sujihiki or yanagabi knife and Bob's your uncle.

I would not use that jewel of a cut on a sammy. That would maybe have a tad of homemade steak sauce at most.

No sauce man!  Butter, onion and cheese.  Bell pepper if you are so predisposed.  No sauce brother.

I prefer some hot peppers in mine Brent. Adds a little pop to it. We are talking Philly Cheese here. My reference earlier was to the Rib-eye Cap...

I'd have to agree that a prime cut of meat like that is overkill on a Philly. Find a choice ribeye roast or a whole ribeye from Costco. With the money you save, buy a slicer. My last Phillys were made using leftover ribeye roast from Christmas. I sliced it super thin across the grain with a regular slicing knife. That said, I was cooking for a small as opposed to a large group. If I was putting together a tailgate I'd buy a slicer.

The one on 141 used to have SRF sliced. Haven't been in awhile to check but might swing by today just to see what they have.

    2. Stagger the beef cubes in a single layer 6 inches apart between two sheets of plastic wrap or wax paper.
    3. Using a meat pounder, pound the cubes until paper-thin.

This is what I do as well... Toss it in the freezer for a bit and slice it as thin as I can. Then pound it out even thinner. Works well and is much cheaper than buying a slicer.

How about just grinding the cut you want. I do faux cheese steaks with ground elk all the time.

You don't need overpriced prime beef for cheesesteak. You're gonna slather it with Cheez-Whiz junk anyway! :l

If you have an RD nearby, they sell presliced beef knuckle.  It works good for cheesesteak sammies.
