What a hassle to find decent Philly Meat. Seems like a high quality offering might be a good seller. Just a thought....not sure if others here would purchase, but know that I would. Ha.....its great outdoor cooking time here in the south.

Do you have an H-Mart nearby? Mine have SRF lifter meat (http://www.beeffoodservice.com/recipecut.aspx?id=253) in the meat case as a standard item. I usually use for stir fries on a griddle or wok, but it would probably make great cheese steaks.

Just my $.02 but I wouldn't pay SRF prices for cheesesteak meat. Get a choice grade boneless ribeye. Partially freeze it, then slice it thin. EZ-PZ.

A slicer would definitely be easier. I just use a knife. I found my brisket slicing knife works best. I have an electric knife but I find that the brisket slicer is far superior for this or any other slicing.northGAcock said:

I will be honest though- I have only done this for serving 4-5 people not a large group. I have heard that the butcher at the grocery store might do this for you on a slicer. I am not sure if the butcher has a slicer or if this must be done on the deli slicer. Perhaps with a couple of days notice they wouldn't mind.Which came first the chicken or the egg? I'm glad I'm not the only one who struggles with this. It sounds so easy to slice the steak thin, but it's harder than it seems. Or at least to me it is.northGAcock said:

get one of these for $20. I have one and love it. It shaves any meat like a razor blade. I bought it to trim belly and brisket but would easily shave any meat for Philly'snorthGAcock said:

I'm a Philly boy and had to improvise during the 22 years we lived elsewhere. The roll is also important, but you can order Amoroso's on line (I've ordered from Amazon in the past, not quite the same as a local, fresh purchase but better than lots of non-philly alternatives). For the meat, in a pinch try an Asian market - look for Shabu Shabu or Sukiyaki rib eye. Another improvisation alternative:
1. Cut each rib eye with the grain into 1-inch cubes.
2. Stagger the beef cubes in a single layer 6 inches apart between two sheets of plastic wrap or wax paper.
3. Using a meat pounder, pound the cubes until paper-thin.
4. When you're done, the slices of meat should be almost transparent.

I'd have to agree that a prime cut of meat like that is overkill on a Philly. Find a choice ribeye roast or a whole ribeye from Costco. With the money you save, buy a slicer. My last Phillys were made using leftover ribeye roast from Christmas. I sliced it super thin across the grain with a regular slicing knife. That said, I was cooking for a small as opposed to a large group. If I was putting together a tailgate I'd buy a slicer.Michiana, South of the border.

This is what I do as well... Toss it in the freezer for a bit and slice it as thin as I can. Then pound it out even thinner. Works well and is much cheaper than buying a slicer.da87 said:

How about just grinding the cut you want. I do faux cheese steaks with ground elk all the time.
