Catering A Wedding And ABT's

I am catering a wedding for 100 people in June and one of the apps will be ABT's. Fairly cheap on materials but long on labor cost. 

What do y'all think would be a fair price? Not looking to gouge the client, but I want to ensure I don't short sell myself. 

$1.50 per?
MMBGE / Large BGE / XL BGE (Craigslist Find) / SF30x80 cabinet trailer - "Ol' Mortimer" / Outdoor kitchen in progress.

    $1.50 seems pretty steep for an ABT, but if you can get it - get it.

    Ms. Shirley is ready for pickup on 18FEB. As a matter of fact, Tyler is calling me this evening to go over final pricing and build specs. I am looking forward to getting her home and putting her to work earning her living.

    I think $1.50 is more than fair. Using good name brand cream cheese and good bacon, fresh jalapeños and seasoning is not cheap. Not to mention the cooking expense.
    You get what you pay for and your reputation depends on a good final product.

    Full disclosure.  I have zero experience catering. So take this with a grain of salt.

    But I would probably start by figuring out how much I would like to be compensated for my time.  Then I'd probably just ask to break even on the food expenses.  So my asking price would probably be a materials+labor price instead of a per unit price.  If you then want to divide to equate out to a per ABT price, so be it.

    The caterer providing for my wedding coming up toward the end of the year has jap poppers on his menu. He charges $25.00 per 50 poppers...not sure how many he sells.

    Did you get a sample of that popper?
    Lots of places around here sell poppers and they are not even close to looking like what we call ABTs. Most are a small piece of pepper wrapped in breading and deep fried.

    how many abts can you assemble in an hour, whats the hourly rate for a caterer. i dont think i could do 50 an hour and ive gotten pretty fast with these over the years and you still need to cook them and serve them. the way meals add up for these things its not usually 1.50 each abt, its usually something like 10 dollars, appetizer x 100 dinners =)

    Have you got any cheap labor available? That could help lower the cost.

    FWIW I saw ABTs at the grocery store once and I am pretty sure they were closer to $2 each if I recall correctly. 

    I would call them something else for a wedding gig. Perhaps just bacon wrapped stuffed peppers. 


    Which came first the chicken or the egg?  I egged the chicken and then I ate his leg.

    Those may not be handmade - they may just be purchased from RD and cooked.

    I have not tried them yet..although will in the next coming months. They creamcheese filled, bacon wrapped jalapenos. I am not certain if they are wholes or halved. I prefer halved when I prepare them at home. Although whole tends to hold the fillings better.
