@Nolaegghead - great looking pies. I have had this recipe bookmarked for a year or so and never made it, and seeing your pics I am now motivated. Did you cook these on an egg, in the oven or some other toy that you cook with? I see the dough uses a teaspoon of olive oil, so high heat would be out wouldn't it? I know @CarolinaQ does his in the oven, but his goes over 500*. 500 is the max on my oven.

@pab I cooked these in my oven at 500F convection on a stone and steel (had both in there at the same time so I could cook 2 at once).

@Nolaegghead - guess mine will have to be done a stone, haven't added a steel to my collection of toys yet :) Thanks!

@pab, just curious... Nola posted this recipe from Roberta's in Brooklyn. I posted a pic of the actual restaurant. How is that "Off Topic"? As if it mattered. =)

I am doing this pie shortly at 550° on my steel. Just to see how it will be when this old oven dies.

I hate it when I go to the kitchen for food and all I find are ingredients!

I have a couple of steels.  One my buddy cut out in his shop, the other I made from a piece of a chassis from an ICP (inductively coupled plasma spectrophotometer - not insane clown posse).

Bingo.  Also is an actual fried chicken ball dish, but you right.

I'm more interested in the fried chicken ball dish. Also commonly made with cauliflower (Gobi Manchurian) for the "veg" folks. Both are "Indo-Chinese " dishes.

    C'MON NOLA!! Where is it??
