I got a cheap brisket a few weeks ago and cut it just like that. Fed the pieces into a grinder for hamburger. Some mighty fine burgers!!! But don't think I'd do it w/ an SRF brisket.

I just got a cookbook called "Pornburger" by Mathew Ramsey a few days ago.
His "Pornburger Blend" is 1 part sirloin, 1.5 parts short rib, and 2 parts chuck.

These burgers were rediculous. Did a double for myself and a single for my daughter with sautéed onions and tomatoes. I am in a meat coma.
