Turkey Dilemma

I was asked to smoke a pair of turkeys for Thanksgiving.  One: no problem.  Two: haven't a clue.  I can't fathom how to stack a pair of 12 pounders on my Large so I'm racking my brain for another solution.

I thought about putting the first one on to get some smoke on it, pull it early and finish it in the oven.  I thought I could try to time it so it finishes when #2 is done on the Egg.

Or do I just plain cook the first one early and reheat it?

Or I still have a kettle grill that I could try to remember how to use.

Or do I put a hit on my wallet and buy a 2nd Large?  :)

What would you do?

Thanks in advance!

If you can somehow get another egg out of this, do it.

I'm guessing you could loose the fire ring, put the PS in legs up, drip pan and cook your turkeys on the vertical stands.  No the best of solutions but I really think it would work.

Sounds like a reason to get that second Large.

Salado TX & 30A  FL: Egg Family: 3 Large and a very well used Mini, added a Mini Max when they came out (I'm good for now). Just given a Mini to add to the herd.

I'll be at my parents this Thanksgiving. I'll be using their egg so my large will be at home. Feel free to borrow it in the meantime. No big deal to me any. I load the thing into my truck 5-6 times a year. I can also run it down to you. I'm always looking for an excuse to get over to Mrs. Pork.

Either get another large egg or a medium :-)

    I will say this....

Consider yourself blessed that you have a friend who is willing to loan you one.

If I had that dilemma, I can imagine my friends asking if I could do a third one once I was done with the first two.

    ...................

I I agree with removing the firebox and using vertical stands. Hopefully you will get some $$ or booze out of this to compensate your time and headache.

Don't use too much smoke wood.

FTC works for Turkey.  I've done it where I cooked it at my house and it finished a few hours early - FTC'd it and took it to a friend's house and it was great.  You can cook the first one to 150+ in the breast and 170+ in the dark meat and it will keep above 140 in a decent cooler for several hours.  The skin may not be quite as crispy as if you didn't FTC it, but it's still very good and juicy.  You can have 2 ready at the same time even if you cook them one at a time.

@Mattman3969 idea will work.  Ive done it before....@Weberwho is generous amd represents what egg nation is all about

but, the ultimate solution is to use this as a reason the add an egg to the collectiom. Early xmas gift and one thatll keep on giving!
  • How about spatchcocking the turkeys and then using a two tier set up. I you put one at the felt and the second just an inch or so above the breast height  I think you might be able to  fit two turkeys on  a large BGE.

@sheetmetalpete, nice I would just settle for a medium or small to go with my XL.  Nicely done sir.

  • Thanks everyone.  I'm probably going to regret my decision come spring when the cars come out of storage and go back into the garage where I keep my Egg(s).  It's going to be tight on space.  :)

I'm still going to try removing the fire ring and go vertical.  That sounds interesting and something I'll likley need to do next year when I have some big tom turkeys to cook.

I guess a test run turkey for this coming weekend is in order.
