Fair BBQ...

Went to the fair tonight...stopped at the award winning best bbq in the state stand.
Got the brisket.
Wasn't as good as mine. (and mine probably isn't as good as yours)
I'm sure the guy who runs that stand can do some mean brisket in competition, but that dry shredded smokeless beef they served me tonight..... man, the Egg really ruins you for eating BBQ out.
I should have tried the ribs.

Stopped at a place with some seriously badass smokers. Super nice pitmaster showed me around. He cooks all the briskets the day before, slices, and pans them with juice, and reheats the next day for service. It was lousy. The best brisket I ever ate was at a motorcycle rally in Johnson City. The man owned a local place but told me he sold more brisket at the rally than he normally does in a month.
There was a long line and the second night, he sold out before my turn. Don't know his secret, but it was good.

Sounds like that guy has it down, Bob. The secret there is probably that he sells it out...he is serving it as it becomes ready, probably in that solid 1-3 hour resting window after it comes off the smoker. That has to be it. Serve what you cook and don't try to predict traffic later in the day and keep extra meat alive.

I used to love the BBQ too, but I can already tell, I am not even going to be a big fan of our local BBQ Restaurant anymore, "Sauced" after eating what the Egg produces and all I keep learning around here much less the fair BBQ.
