Mini Pork Loin

Found a lonely little piece of pork loin in the meat case at the grocery, $1-off sticker 'cause it's on the sell-by date. Pound and a quarter or so for $2.99 :)Seasoned with garlic, thyme, cumin, ancho powder, salt, and pepper, and onto the Mini with Mini Woo at 270ish. 30 minutes or so it hit 145ish at the thick part. Took it off and got the Mini to 400 in a few minutes, and seared. A little more done than usual, but wonderfully juicy and sooo flavorful! With roasted and sauteed acorn squash patty, made for a great weeknight cook.
