"Noah's BBQ" - Let the debauchery begin

Just thought I'd share my plans for the weekend.
My brother-in-law and I decided it would be fun to buy a boatload of meat to smoke for friends and family. I've been referring to it as "Noah's BBQ," as it'll feature two of nearly every animal.
Appetizers will feature wings, ABTs and smoked cream cheese with cedar-planked salmon.
Mains will be a Wagyu packer brisket, pork butt and maple-bacon ribs.
All rubs and sauces (of which there are many!) are homemade.

The plan is to employ a Large, a Mini Max and a Weber Smokey Mountain. Due to safety concerns about an Egg-overnighter on my wooden deck, we've been smoking the butt and brisket on the WSM. Pics of progress below.... (Sorry about the obscured brisket shot!)

Sounds like a lot of fun and it looks like you are off to a good start. My son and I have done something similar on several occasions and really enjoyed it. Keep the pics coming.

Some serious marbling on the brisket. Fun cook and great gesture. Continue to enjoy.Louisville; Rolling smoke in the neighbourhood. Life is too short for light/lite beer! Seems I'm livin in a transitional period. CHEETO (aka Agent Orange) makes Nixon look like a saint.

I know. I couldn't believe it. The brisket was also so nicely trimmed that I took off almost nothing. Financially, I think the cost is likely quite similar to a larger, lower-grade brisket that I would have had to trim significantly.lousubcap said:Some serious marbling on the brisket. Yes, $115 CAD (no tax) for the Wagyu brisket. I've never been entirely happy with the briskets I've made.... Until now! Hands down, without a doubt, best brisket I've ever had anywhere (and I'm not saying that because I wish to claim credit)", as I recognize meat quality was likely the deciding factor here). Unfortunatley, it was ready early and sat about 7 hours in a hold. Still..... Amazing. I'm am happy (and in disbelief) to report that everthing we made turned out great. Unfortunately, I missed pics of a lot of items, but have included a few shots below.

Good. The texture of the sauce, which featured bacon and BBQ sauce that had gone through a blender, was a little different, as it was like a rich, fatty BBQ sauce.
