A simple monster t-bone cook tonight

Sometimes it's the simple things ... or cooks ... in life that bring great pleasure. Aged T-bone steaks from our local butcher served with triple cooked duck fat chips and some lovely sweetcorn. Steaks not messed about with, a bit of salt, pepper and butter, letting the meat speak for itself. Perfect end to a hectic week.

@EggNorth - they are indeed deep fried, although only at the end of a three stage cooking process, hence the name triple cooked chips ... or fries, in your vernacularEggNorth said:Very nice. Are those fries deep fried? They look fantastic, great match for those steak.
. Triple cooked chips are a bit of extra effort but so worth it.
If you want to give it a try, the recipe is on my food blog. I use a slightly different method to the classical approach, which means that the chips are only deep fried once instead of twice. Which is my rationale behind saying I can have more on the plate
.

Yep, sometimes simple is best, especially at the end of a tiring (and tiresome) week. A meal like this, where the raw ingredients shine through without the need of either explanation or exploration, remind me of the great poem "The Learned Astromer" by Walt Whitman:Foghorn said:Simple but outstanding. Great job.
When I heard the learned astronomer,
When the proofs, the figures, were ranged in columns before me,
When I was shown the charts and diagrams, to add, divide,
and measure them,
When I sitting heard the astronomer where he lectured with
much applause in the lecture-room,
How soon unaccountable I became tired and sick,
Till rising and gliding out I wander’d off by myself,
In the mystical moist night-air, and from time to time,
Look’d up in perfect silence at the stars.
