Koji dry-age experiment

I was intrigued by a previous post. Just put a decent sized ribeye coated in koji down uncovered in the fridge. Probably throw it on the egg on Saturday. Will update through the process.

Almost 24 hours in... Appears a little drier and a slight darker color change normally associated with aging. It also has an interesting nutty scent. Stay tuned.

48 hour check in. Not much change... Maybe a little darker/deeper red. No signs of a real crust forming. Going down for another 24 hours.
