Dry Aged Beef - RRP You Might Be Interested in This

I saw this video this morning on my YouTube feed and thought I'd watch it.  I know a bunch of you like to Dry Age beef, especially RRP.  The 420 day dry age looks way to funky for me.

    I saw some Iberian Ham in Spain a couple of weeks ago that has been aged for 30 years. At room temp. 

    XXL BGE, Karebecue, Klose BYC, Chargiller Akorn Kamado, Weber Smokey Mountain, Grand Turbo gasser, Weber Smoky Joe, and the wheelbarrow that my grandfather used to cook steaks from his cattle

    @RRP I have read a lot of posts on dry again and plan to give it a shot in the near future. Where do you get your beef? Alwans?

    I chance getting strung up by my thumbs for saying this, but I am not a fan of Alwan's! They must buy that red dye they paint on all their beef in 55 gallon drums! When even the fat is red, not white that's a dead give away. For a butcher shop I prefer Pottstown Deli in the Metro Center. OTOH the sub-primals I buy for aging I have always had good luck at Sam's. Key there is to go like on a Monday or Tuesday when the meat bins have been restocked with dozens to choose from. Over the years I have gotten fairly good at reading the marbling on the ends of ribeye and NY strip loins.

    We are not members there so no. Question for you though - does the EP Costco carry prime? I've heard yes and no.

    Great - and when you do please ask if they sell the whole sub-primal in tact or does their beef come in already sliced and packaged. Thanks.

  • Ron, my Costco in Augusta, GA does offer Prime and they offer it whole sub-primal or sliced. Pretty good prices and I always had good beef from there.  I'm also a member of Sam's and their beef is just as good.  Usually one or the other has a sale on a cut of beef and that makes my decision where to buy.  

    However, my favorite place to buy beef is in Edgefield, SC (small town close to Augusta) that buys local beef and cuts it to your specifications.  They also make their own sausage.  Best I ever had.

    I stopped at the EP Costco yesterday and they had whole subprimal prime rib. They had about 6 in the case at the time for 7.89$ per pound. How does that price compare? It looked good to me but I have no comparison.

    You asked me earlier in the thread if we knew each other and I do not think we do, but after a random conversation about Eggs this weekend with my dad we might have a commonality. Is your wife's name Patty?

    What's the name of the place your referring to friend.  I'm in Aiken SC, I assume your referring to Cones?

    I'm actually referring to Old Edgefield Butcher Shop.
