Blueberry BBQ Spatched Chicken

Saw this recipe in summer edition of Savuer and it looked so good I bought in.  Blueberry BBQ sauce made a day in advance and then bathed over the bird regularly during the last half of the cook.  Cook was at 400-425 raised direct with one big chunk of cherry.  Bird sat out in the fridge all day.  Grilled corn and tater plank sides.  This absolutely is a do again!  The blueberry with the vinegar and sugar on the bird is worth the work.  Now just pictures.

Dinner rocked.

For you my friend and I'll repeat this because it was that good.  The recipe was from Savuer.  It's as follows:

    3C blueberries
    2C Apple Cider vinegar/divided
    2C Granulated Sugar
    1/4 tsp red chili flakes
    1 bay leaf
    1 cinnamon stick

Pulse the blueberries and and 2T of the vinegar to break the berries down.

put that mixture in a sauté pan with all the other ingredients and simmer for 1 hour on low heat

place saucepan contents in a blender and blend until smooth keeping a kitchen cloth over the blender top hole to prevent an explosion.

put blender contents through a fine mesh sieve back into the original saucepan and simmer fo 45' to reduce by 1/3.  Keep this overnight then baste away during the last half of your cook and at the end.  It is good.

Looks outstanding Brent. That is a beautiful bird. ..I make a Chipolte Blueberry Stout sauce myself that has a little bit of kick to it. The Blueberry makes a great flavor base....great on pork ribs too.

I must try this! Years ago there was a place in town that had a blueberry based BBQ sauce for their ribs. They were outstanding. It closed many years ago. Recently I found the woman who cooked there. Unfortunately time has stolen her memory and she could not recall how she made that sauce. I had hoped to duplicate the dish for my Mom. This version sounds great, so hopefully it brings back those fond memories of the Bue Moon.

Did not like blueberrys till a trip to Maine a few weeks ago and had fresh wild Maine blueberrys. Got to try that.

Recipe says "months" covered in the fridge.  Makes sense.

Mickey, we went to northern MI every summer when I was young and we'd go out and pick wild blueberries.  Nothing like it and no comparison to store bought.

Man that looks fantastic!!  There was no problem with all the sugar in that sauce and cooking that hot direct?

Not a problem brother.  Came out delicious.  The sauce only goes on in the last 20 minutes or so.

  • I never do enough with blueberries. I'm doing 2 spatch's tomorrow, I think I'll try this on one of them.

Sorry to be late to this party, but I had to chime in.  The only time I came across a blueberry BBQ sauce was at a little cafe joint in downtown Birmingham, AL several years ago.  Being from Texas, fruit in da sauce seemed a little like sacrilege.  Needing to try it, was smart because I was sold.  Very, very good match.  I will definitely try this on chicken.  If memory serves me correct, it was actually served on brisket.  The place was very "Southern" fare and upbeat.  Thank you for sharing!!!!!
