Howdy-
I am making a brisket for a friend, and have been since early this morning.
I am about 10 degrees away from being done and wondering about wrapping it and putting it in the cooler for the night when it is complete.
it's 10:30 here now and I figure it will be done around 11pm.
But I am concerned if I should let it sit for an hour or more, and then pull it from the cooler and go to the fridge or
-cooler all night until morning then refrigerate?
Unfortunately, as much as I would like to get into the adult beverages and let it play out, I do not have that luxury this evening.
I do plan on gifting it sliced and frozen.
Thanks for any response- Cheers! Paul

If you are going to slice and freeze, pull it off when it is done, put it on a wire cooling rack and put it in your fridge uncovered so it cools fast. Go to bed.
In the morning it will be cool. Slice it. Freeze it. Give it to your friend.

When it is done, it's done. The rest thing people talk about - what does that do exactly - maybe finish cooking if it's taken off before done, but if you take it off the grill when it's done, you just want it to cool. Resting in a cooler overnight is pointless unless you want to serve it warm for breakfast.

Thanks @nolaegghead! Just out of curiosity, I really wonder if it would go to mush if I did leave it overnight in the cooler. Not going to try on this round- lolProud resident of Missoula, MThttps://www.facebook.com/GrillingMontanahttp://grillingmontana.com

Probably not get mushy enough to notice.
Every once and a while someone will get drunk, throw their brisket in a cooler for a few hours with low expectations, then people eat it and it's excellent. The "rest" step is now part of their standard operation procedure. And they plaster this advice everywhere, but there's no explanation other than they may be drunk, and/or pulling early, or it's just an exceptionally good chunk of meat and they had low expectations.
You have a goal - cut, freeze, give to buddy. So cook til done, cool (in my opinion a refrigerator works fine for this), cut freeze and you should be good.

Never trust a hippy, a liberal, a man in pink panties or a giant dwarf. They will lead you astray my friend
I only kid above. You can trust a giant dwarf sometimes. But none of the others
