500 degree turbo chicken on the mini.

Nothing new or special here. This is some of the stuffed breasts and thighs that I have posted many times in the past. The only difference being the cooking temp. Due to time and foul weather, I ran these at 500 degrees until within 6 degrees of my target temp. I then bumped to 600 degrees for the finish. The high heat worked great on the bacon. 
Overview:
Thighs and breasts stuffed with spinach, pineapple, cream cheese and jibbled up bacon. Then wrapped with bacon. 

A simple rub of a few of my favorites. 

On the mighty mini at 500 degrees for 33 minutes and 48 seconds. 


Then a 4 minute finish at 600-625 degrees. 

Turned out pretty darn good.

    Another winner! I would have thought 500 would have been too hot but these look perfectly done. Did you use briquettes instead of lump?

    Did you use briquettes instead of lump?
    I use briquettes 99% of the time when using the mini. However I used Rockwood for this cook. I only did that because I was out of briquettes and did not want to go to the store due to bad weather.

    You said it worked great on the bacon. How was the chicken? I also wouldn't think to go so high with a chicken cook. Thank you for trying it :)

    The chicken was excellent my friend. The bacon provides a great barrier and protects the chicken from scorching and burning. Remember, this was a indirect cook, not a direct cook.

    Thank you brother. I assure you that the mighty mini is not a toy. It is an a$$ kicking machine in the scope of what it can hold.

    Easy now Scottie....I didn't call it a toy. Didn't happen. I'm seeing the results. Looks great.
