Pulled-pork Shepherd's Pie

late start on dinner, hit the fridge for leftovers, my new, small cast iron pans were calling to me.
layered the following: canned shoepeg corn and sweet onions sautéed in butter and rub, leftover pulled pork mixed with a generous amount of sauce, shredded aged white cheddar, mashed potatoes and then a generous smear of bacon jam. Into the oven at 400 until it bubbled over and served with an arugula, feta, watermelon salad.
Good experiment, will refine this and cook on the egg next time.

Good question, I'm not sure. Balance of ingredients. Maybe get some vegetable in there, but not sure what. Maybe add some bacon? Cheese on top? Smoke would add to it. No specific complaints or needs, just tweak in some way next time.blasting said:
