Chelean Sea Bass

It's my wife's birthday today and she requested Chelean Sea Bass and crab for dinner.   Off to Central Market with the rest of my teacher gift cards and did this.  Sorry, the photos do not do the cook justice, was in a rush.  Her parents arrived for desert as I was finishing the cook.  I found out that Chelean Sea Bass is actually Patagonian Toothfish.  Whatever, it was amazing!

Lightly salted and peppered on the counter, then added some Dizzy Pig Raising the Steaks.  Seared in a CI pan raised direct at 500 for 3" per side.  these were very thick.  Rested in a pan of butter and more seasoning, then grilled direct about 3 minutes per side.  Turned out perfect, not over cooked, a bit flaky and perfect texture.  Served with Wild Mushroom Rice Pilaf, fresh crab chunks and Japanese Green Beans from my new cook book..  Thanks for looking!
