    I told him we wanted both briskets and both full clods from the next one. He's in Missouri working with another breeder for the next 7-10 days so it will be a few weeks.

    Brother Grim, the Thunder Horse mainline project that im on should end in the next 12 or so days. Spooling is not until August. That gives me a little off time. We really should get together and ride out there.

    I got the monster brisket. Holy cow is it impressive in person. But, the cryovac is shot and it has thawed. My plan was to cook it July 10 at the river party. Any idea s in best way to hold it till then or do I need to cook it before? Should I take it out of the loose cryovac?

    I'm certainly no expert on this topic but I've always heard that a re-freeze compromises the quality. I think if it were me and I had a piece of meat that nice, I would cook it. I just read that you don't have your big cooker though. Maybe you should head over and throw it on with @SGH.

  • I stopped by their booth at the farmers market again today and picked up a few steaks. Even though these are all "off cuts" they look pretty damn good. I'm wondering with the intense marbling in the briskets if some of these lesser known cuts might not be the way to go. Still at $40 per lb, that's pretty damn steep for a shoulder steak! 

    First pic is a shoulder filet, 2nd is a chuck eye and 3rd is another steak cut from the shoulder. They certainly look good for what they are. We will see later tonight.

    interesting.... not your typical 'steakhouse' cuts, but they look just as good.  how are you planning to cook them?

    I'll do one just salt and pepper to see how the flavor is. We are doing yakitori tonight but I'll use a grocery store steak for that.

    I go to bee cave. It's not that great but it's close to home. Ranger cattle are at 6 markets a week thoughout austin so check out their Facebook page for one close to you (if you live here).

  • Well....no. Cooked up the chuck eye and the shoulder filet tonight. The chuck eye was very good but at $40 per lb (and was supposed to be $50 per lb) I can get way better. The shoulder filet tasted like it came from the shoulder. Had the texture of a sirloin or something. Pretty tough and chewy. Not even close to a $40lb steak. I cooked them SV and seared in butter with garlic and rosemary then made a red wine pan sauce from chef steps . It was really good and the filet needed it. The chuck eye was really good but not at this price. Wish I had better news to report but I can't recommend these anywhere near these prices.
