My wife's cousin is staying with us for a couple of nights on his way home from a fishing trip to OBX...caught a lot of fish, especially tuna. Asked me to cook up some loins. Decided to do them on CI using the MM.
Marinated them with some olive oil mixed with soy sauce and wasabi powder. Then I coated them in some black & white sesame seeds.
Swimming Friday afternoon, consumed Sunday... Don't get much fresher or better.

Large BGE & Mini Max for the wok. A few old camp Dutch ovens and a wood fired oven. LSG 24” cabinet offset smoker. There are a few paella pans and a Patagonia cross in the barn. A curing chamber for bacterial transformation of meats...
