OT Bacon Jam OT

Swear on my mothers grave this stuff exists.
My Beautiful Wife saw this while shopping with our daughter and brought it home to me.
Put it on a pretzel croissant with lettuce, mayo and a thick slice of tomato.....pretty tasty.

    Ron, I've had it, homemade by an aquantace, must say ours was underwhelming.  Again a home made deal. Probably played a role.  Give me bacon and sautéed onions and I'd be pretty happy.

    It was a first for me, and my first thought was I was being pranked. Then I opened the lid, and the aroma was not bad at all. It tried some on a saltine, and it was underwhelming to me as well. I put some in a pan, heated it up, big difference.

    I'm tellin' you, spread on a thin crust pizza or naan like a pizza sauce.  Add a little goat cheese, that's it, or maybe a few green onions sprinkled here and there.  Really good, easy app, not so much a meal.

    We also mix it 50:50 with fig butter as a base layer for pizza topped w/prosciutto, etc.

    Spreads really well on a burger.  I love that stuff.

    I have had it at a restaurant on a burger and it was outstanding.  They used tomato bacon jam.  


    Which came first the chicken or the egg?  I egged the chicken and then I ate his leg.

    I first had it at Vin Rouge in Durham - warmed a little and spread on thinly sliced and charred sourdough.  I've seen several recipes to it, but haven't tried making my own.    I did pick up a container of Trader Joe's bacon jam, but haven't opened it yet.

    I did a smoked Kurobata pork belly with tomato bacon jam and grits for an 7 course upscale dinner I did a couple years ago. It was good then and its good today.

    I have got to try some recipes for this bacon jam. My BIL,  the chef, told me the two things he keeps in his kitchen is bacon jam and duck fat. He gave me several ideas for use.

    There is also "The Bacon Jams" based near philly, I believe. Cold is "okay", warmed is fantastic.

    I've made bacon jam, loved it!  Don't know if it was a similar recipe or not - this one was sort of sweet and sour, reminded me a little bit of apple butter in that regard..  I have 3 different recipes, but only made one of them so far.  One of the other two is on the King Arthur Flour site, I think, and the other one is on the NY Times Food site.

    Bacon Jam

    2 pounds Bacon Cut Into 1 inch Pieces 
    2 Large Yellow Onions Julienned (I didn't julienne them, just sliced them thinly)
    1/2 cup Brown Sugar 
    4 tablespoons Chopped Garlic 
    1/2 teaspoon Cinnamon 
    1/2 teaspoon Nutmeg 
    1 teaspoon Cayenne Pepper 
    1 cup Brewed Coffee 
    1/2 cup Sherry Vinegar 
    1 cup Bourbon 
    1/2 cup Maple Syrup 
    3/4 cup Ketchup 

    Directions:
    In a saucepot render the bacon over medium-high heat until about 75 percent cooked.  Pour off about 3/4 of the bacon grease Add the onions and cook until very soft.  Add the brown sugar and cook until onions are well caramelized.

    Add the garlic, cinnamon, nutmeg and cayenne and cook for 5 minutes.  

    Add the coffee, vinegar, bourbon and maple syrup and turn the heat to medium-low and cook until thick but not quite dry. Stir every 15 minutes or so to prevent sticking and burning.  

    Add the ketchup and cook for 5 more minutes 

    Let cool for 15 minutes then process in a food processor by pulsing 10-15 times or until you reach your desired consistency. 

    Store in the refrigerator for up to 2 weeks

    We make it too. And it's delicious. We use balsamic vinegar, maple syrup and crushed bacon. Simple throw together that makes a burglar POP.

    I have to tell you when warm, it is divine. I have talked, My Beautiful Wife,  into baking some of her world famous "Angel Biscuits" for me this weekend.
    (I chose the term "talked" because "begging" appears to be less manly) I am going to try them on the egg. Can't wait!

    The Trader Joes Bacon Jam is decent. A little too sweet for my tastes but I keep buying it so I guess it isn't too too sweet. :)
