    Here they are on the grill!
    No plate shots as they were devoured!
    Only mistake was not cooking more.
    But at least we have enough for another round next week.
    Already have another in the fridge got to learn to overlap the process.

    You don't sear?  I cook them only by searing. They brown like crazy, the fat especially.

    You don't sear?  I cook them only by searing. They brown like crazy, the fat especially. 
    I roast them at 400-450 to IT.  You're right, they brown quick and well with perfect MR treating it like a small roast.  When I sear them I seem to get to much dessication externally.  Talk to me brother.

    No real technique. Not the most anal retentive of cooks. I don't time or temp anything
