Big cook planned for this weekend - Wish me luck

I'm an alumni advisor for my fraternity and have offered to feed the undergrads this weekend. I've been getting different head counts so I settled on around 42 lbs of pork shoulder. I'm also making 3 batches of Potato-Mac, a double batch of baked beans, slaw for a crowd, brownies, and will also have Kings Hawaiian rolls. On top of that, it just so happens that I have some pork belly that's been cured for 7 days and will be going into the XL tonight for a cold smoke. Couldn't have timed it better with the way the weather has cooled off; temps expected to be in the upper 40's tonight. Going to give it a couple more hours for the pellicle to form. 

Sprinkled with black pepper, maple sugar and some bourbon smoked sugar. I test fried a couple slices and it wasn't too salty, but tasted really, really good. The brothers aren't going to get any of this! Plan is to cold smoke this tonight, then wrap and refrigerate for a day or 2 to let the smoke even out before I slice it up.

Here's the XL all cleaned out and ready to go for the cold smoke tonight, then the butts on Saturday am. 


I have groceries all over the house and my fridge is packed but it's going to be worth it.



Boiled a a dozen russet potatoes for the mac tonight and letting them cool over night so they won't fall apart when I cut them up.

    Belly went on at O-Dark-Hundred. Sorry, no pictures since there's a fairly decent rain falling and it looks like it's here to stay for a while. Plan is to let it smoke until 8 or 9 AM. Hopefully rain will be done by then too. Lots to do tomorrow...

    So I woke up this morning to this:

    Bummer, smoke went out last night. Not exactly sure why since I had S/W cap and bottom vent wide open. Maybe someone with more experience with one of these can explain better. I'm re-lighting at both ends and will be back to smoking soon.

    Been a busy afternoon. Got 2 batches of potato-Mac made. The brownies made and trimmed and rubbed 2 of the 5 butts.

    Gonna take a little break and finish the last 3 butts later this evening. Also still need to make the vinegar based sauce.

    This has been a known issue with the pellets.  A few ways to avoid a burnout.

    1.  Pound(in a bag) the pellets to a sawdust consistency.

    2.  Use Todd's A-maz-N dust or smokinlicious dust, avoiding pellets period.

    Use the remaining pellets you have, and stock up on dust.  We like to use them in the egg like wood chips for a bbq smoke.

    When I was in school kegs were a common occurrence. Now, it's a $1000.00 fine per keg for any frat caught with such, on or off campus. The administration is trying to dissuade wholesale drinking. They know it goes on, just trying to make it a little harder to have so much free flowing alcohol at one time, in one place. I get what the intent is. Trust me, I did a lot of stupid things before drunk driving was brought to everyone's attention. Sometimes I wonder why/ how I'm still here. It's a way different atmosphere on campus now, than it was over 35 yrs ago.

    Thanks @Focker! Glad to know it wasn't anything I did. This was my first time using the amazn so wasn't quite sure what to expect. Learned a valuable lesson that I can't leave it unattended over night. When I re-lit at both ends, it burned the way it was supposed to.

    Hoping to to keep her somewhere between 275 and 300. Probably closer to 300. There's a lot of cold meat in there so it may be a while before the temp stabilizes.
