Citrus Achiote marinated yardbird cooked indirect at 400 over oak. Really good citrusy bite throughout with just the right amount of smoke. Finished with tomatillo jalapeño salsa. Sinaloa roadside chicken at its finest and nobody ended up in a 55 gal drum of acid to get it. Free El Chapo!

That looks good to me. I do it a little differently but I would recommend using bitter orange from the bottle over fresh squeezed if you can find it. We have it at our local grocery store but every Mexican market will have it. I have actually used pineapple juice for years but I just switched to the bitter orange and I like it better.Sweet100s said:Beautiful color on that chicken.

Fwiw I did 2 breasts and 4 legs. I injected 1 breast and 2 legs and did not infect the others. I marinated both overnight. The injected may have been slightly more flavorful but it was arguable. They were both fantastic and I don't think injecting made enough difference to make that part of the routine. The skin and outside were plenty flavorful and the citrus and smoke permeated the meat very well. It was crazy juicy so the marinade obviously acted as a brine as well.Keepin' It Weird in The ATX FBTX
