I will need to be careful with the brisket sale- I have 3 in inventory (2 SRF black and a Costco prime). The larger issue is that I had a SRF delivery last week and already have another in the queue for two weeks from now.

Indirect at 225F with oak to 100F internal. Then pull and rest while you get coals red hot and cook to 120F with a grate as close to the coals as possible and get your crust. I have a 12" grate I lay directly on the hot coals like in the picture below.
Or you can can go hot and fast like this:
If if you do that, make sure it warms up quite a bit.
Finally, expect shrinkage. About 20%. But at about 18oz, that is 2 portions - the meat is incredibly rich.--------------------------------------------------

What's the difference between the Double R Ranch gourmet hamburger and the SRF hamburger? I'm paying $11lb for the Double Ranch on sale, when the 5lb SRF is just a tad more expensive per pound. Is this a different company?

Double R Ranch comes from a variety of continental cattle. The actual Double R Ranch is located in Washington state. We believe it's better than typical "commodity beef" because we tightly manage and control all the aspects of the production cycle from the genetics, through the feeding and production. We carry primarily choice grade (except the bone-in ribeye which is prime) though we'll be rolling out more Double R prime options soon.
Snake River Farms is "american Kobe" which is a 50/50 mix of wagyu and black angus. On the website we carry black and gold grade, which are both rated well above prime in terms of marbling. So - basically the difference is in the genetics of the cattle. SRF beef will be more marbled with a slightly different taste that is often considered more "buttery" and "beefy".

Saw they had them again the Monday after Valentine's and ordered a couple more.

You're killing me YukonRon. On sale, never had any SRF meat. So I ordered some. Had to try brisket, bought 2 at Costco 2 weeks ago, plus other cuts. Wife says now we need another freezer. Running out of room for her stuff. And SRF briskets on sale next week. I'm dieing here. Gonna have to sell one of my eggs to keep feeding the other before it's over.

No need to put you in the Freezer if you get the RTIC 65 and a decent blade.
