Jalapeno popper corn fritters - you need to try these

Ok, so I tried a new recipe and it is good enough I wanted to share. Jalapeño popper corn fritters - http://www.closetcooking.com/2013/07/jalapeno-popper-corn-fritters.html?m=1
I roasted the corn on the mini max. Once I had them mixed and ready I cooked them in my carbon skillet on the MM. These were pretty darn good. The sauce was Chuy's cilantro lime jalapeño dip. Recipe: http://www.copykat.com/2014/08/24/chuys-creamy-jalapeno-dip/
I would recommend oiling your hands with cooking spray before forming the patties. They have a tendency to want to stick to your hands making it hard to form the patties. Let them brown well before flipping; handle as little as possible.
Cooked some quesadillas on my plow disk to go along with the fritters.


A rain shower popped up so I had to finish cooking them inside. I didn't feel like dealing with water dropping into hot oil.
