Thinking of making a fatty soon. Are they typically rolled like a jelly roll or is it just rolled over once? My benefit of 1 versus the other?

I just get a Jimmy Dean roll and coat with what ever BBQ rub I want and smoke until internal temp is 140, cool slice and enjoy. You can roll out and stuff how ever you want, so yes to your question.

You can roll it like a jelly roll or do the "Fatty piston" method invented by Cowgirl. I like both.

Note above pic. Put as much sausage as you like out on wax paper. That can be rolled out thin, layered w. filling, and re-rolled jelly roll style. Can make big ones that way.
From a single package of sausage, hard to spread it enough to do more than a core filling.
Also as above, Jimmy Dean's is the best. After the 1st few fatties I tried, I went out and bought every brand of packaged sausage I could find. Jimmy Dean's, which happens to be the fattest, turned out the best by a good margin. The fat renders out, leaving nice light meat. Tennessee Pride and Bob Evan's were almost neck and neck for 2nd. Store brands, umm, no.
At this point, I can eat about half a single package fattie. My younger sone will blow thru a whole one, and look for more. Judge your guests accordingly.
