I vote Dixie.  Us hicks up here in Ky. can speak Dixie but we don't understand much Hebrew.  And a question, you reckon any of your readers are now wondering if those Hebrew National hot dogs they been eating, got all those aforementioned parts in em?
Considering Hebrew Nationals are made of beef, no.
Cattle don't have those parts?  Maybe they were just riding piggy-back like grandma said.  Could of sworn something else was going on.

I'm not sure I know the difference.
Hebrew style contains the penis, testicles and the testicular sack. Dixie style does not.
Wouldn't the "Hebrew" style be made with beef or lamb twig & berries? Pork isn't really found in the Jewish delis I frequent. Something doesn't sound Kosher here...

No. Again, it's just a slang name. No real reference or implication implied to the best of my knowledge. It's akin to "Texas Tootsie Roll" aka: erect phallus. Just a name someone gave it years ago and it stuck. Similar to the Texas Tootsie Roll.

My brother in law brings up shoulder "head cheese" each time he comes up from NOLA. That stuff is amazing, he has us hooked on it. I slice it and put it on My Beautiful Wife's biscuits, right out of the oven. Delicious!
I vote for the process of Dixie.

Dixie style seems to be the prevalent choice. No votes for the style of Hebrew. As such, in the style of Dixie it is brother Yukon.

Head cheese is something as a kid I would have never even tried . I had and liked the one at brisket camp. I think it's kind of weird the things we like or will even will try  the older we get. @RRP I think it's cool you can remember something from 60 years ago. I Hope I make it that long and can still remember. Thanks for sharing.

See it, hell I wish I was further south in Dixie so I could taste it. It's been years since I had some good hog head cheese.

Naw, it's just a mock version of head cheese that utilizes the penis and associated parts. Actually you would have no idea that it was even in there when reduced and cooked down.

No sir. At Cen-Tex's request, I'm reserving the imitation calamari for Butt Blast in NC.
