Wouldn't the "Hebrew" style be made with beef or lamb twig & berries? Pork isn't really found in the Jewish delis I frequent. Something doesn't sound Kosher here...SGH said:

No. Again, it's just a slang name. No real reference or implication implied to the best of my knowledge. It's akin to "Texas Tootsie Roll" aka: erect phallus. Just a name someone gave it years ago and it stuck. Similar to the Texas Tootsie Roll.Eggcelsior said:

My brother in law brings up shoulder "head cheese" each time he comes up from NOLA. That stuff is amazing, he has us hooked on it. I slice it and put it on My Beautiful Wife's biscuits, right out of the oven. Delicious!

Head cheese is something as a kid I would have never even tried . I had and liked the one at brisket camp. I think it's kind of weird the things we like or will even will try the older we get. @RRP I think it's cool you can remember something from 60 years ago. I Hope I make it that long and can still remember. Thanks for sharing.
