"Shoulder" Head Cheese. In the style of Hebrew or Dixie?

SGH
SGH Posts: 28,989
Tomorrow and Thursday I will be making imitation hog head cheese out of whole shoulder, tails, snout and feet. It tastes spot on to true head cheese. My question is, does anyone care to see it? It's one of those unique things that most may not care for. With that said, if anyone would like to see the process and recipe, I will gladly document the steps and post them along with the recipe. I will gladly do this in either the style of Dixie or the style of Hebrew. Just depends on what folks would like to see if they care to see it at all. I feel that this is probably something that most folks don't have any interest in seeing. So I thought I would ask.

Scottie, I don't imagine I would need the recipe but am always interested in learning and seeing new stuff I'm unfamiliar with for the education.  Post it up brother, I'd love to see it.

I really don't think to many folks will be intersted in Shoulder Cheese. However the fact that one of my forum favorites said yes, it's a done deal my friend.

@TigerTony brought head cheese to brisket camp, which you neglected to attend and worked instead, :s didn't bother to ask what was in it. Just ate. Bring it on.

Hebrew style contains the penis, testicles and the testicular sack. Dixie style does not.

It's just a name or slang nomenclature. It has no biblical reference at all my friend.

Absolutley brother. It has many uses. Shoulder cheese, imitation sausage for beans, Hebrew style corn dogs. The sky is the limit.

Nothing "imitation" about pig penis sausage at all.  LOL  That's the real deal I guess.

Guess I don't understand why that would upset anybody BUT let me explain. As a little kid the first time I saw something that my parents thought might upset me, spook me or give me nightmares it was a HUGE hog head that they received and left in the garage overnight in a cardboard box. I looked and I even JUMPED when my older sister tore off the cover, but then it was over! The next couple days my Mother turned that head into delightful meat meals and I forget what all else! BUT the other recollection and association I have with that particular head cheese was the first time we had this new thing called "French onion dip". Yes..folks this happened maybe 60+ years ago!

I always thought "head cheese" was the first slice of a cheese block.  Now you guys are talking about making cheese from hog parts and onion dip. WTH?

I would love to see the process. Let me show my ignorance and ask what exactly it is? Never heard of head cheese.

There are numerous versions of head cheese my friend. Including the ripoff shoulder recipe that I'm making. However for clarity, the old Deep South version was made from the following:
1 whole head. Eyes, brain, tongue and spinal stem intact.
    4 feet.
    2 hocks.
2 extra tongues for a total of 3.
The above was the minimum base. This could be added to at will or makers discretion. All of the above would be cooked down and suspended in gelatin.

Thanks for the explanation @sgh. I was jus messing with you.   I'm sure it helped several others as well.

BTW - Post it up, cook it up and if I was closer I'd help you eat it up.

Ears, nose, tail and balls...won't make you squeal any louder, but sure will make you root harder!   In the style of Dixie!

Because it contains the snipped off bit from the schwantz, probably. ;)

I vote Dixie.  Us hicks up here in Ky. can speak Dixie but we don't understand much Hebrew.  And a question, you reckon any of your readers are now wondering if those Hebrew National hot dogs they been eating, got all those aforementioned parts in em?

Considering Hebrew Nationals are made of beef, no.
