Been awhile since I've got to egg two nights in a row. Went with a quina salad with a citurs avacoda dressing and blackened snapper.

Used the redfish. Only thing I use when it comes to blackening. I typically use some butter and a CI pan, but went just straight on the CI grate. Not the same crust as with the pan but close enough.
