Blackened Red Snapper

Been awhile since I've got to egg two nights in a row. Went with a quina salad with a citurs avacoda dressing and blackened snapper.

Just went with the CI grate in the egg. Filled with lump close to the top of fire ring and cooked at 550.

Used the redfish.  Only thing I use when it comes to blackening. I typically use some butter and a CI pan, but went just straight on the CI grate. Not the same crust as with the pan but close enough.  The steak is great for bacon blue cheese burgers.
