Is this normal?!

Just stopped into Costco for my very first time. Headed straight for the meat section. Is this price normal 12lbs of prime?  Always afraid to try one because of the cost.

  • Was just at the local grocery store.  They had choice for $6.99/lb.  I don't even think the Costco around here caries brisket.  Such is the PNW.  At least we have cheap salmon.

    You people and your fancy Costcos...wish there was one close by, just Sam's around here...can't find prime anywhere and choice is about that price. Jealous!

    @3/lb I'd buy 10 of them. That would be the price for choice in my area.

    I was just in walmart and they had more than I've ever seen there. At least a dozen in stock. Usually they just have 2 or 3 if they have any at all. $2.76 a lb, but I didn't notice the grade. I seriously doubt it was Prime.

    I don't particularly like brisket so I never buy it, but for some reason, I always look at the price. Go figure. :) One of these days maybe I'll try again. 

    I hate it when I go to the kitchen for food and all I find are ingredients!

    Just looked and the brisket in the freezer was purchased in December for $2.79 per pound for a 12lb prime.  Costco had four at the time ... I bought the floppiest one.

    That's a great price.  No COSTCO near me but BJ's has just the flat for $4.89 and not prime,

    someday I want to see one side by side with a SRF. I didn't think there was a huge difference between Costco prime and what they sell at RD.

    So be nice....first time trimming. I think I trimmed too much around the bottom of the point.  If I did is there anything I can do to not scorch it and burn?  Any pointers welcome

    If my Costco had prime briskets for $2.99/lb, I'd load up the cart. And no worries on your trimming, don't worry about the point drying out, the point will be fine. You are in for a treat.

    What do folks think?  Does Costco tenderize the packers they sell?

    They blade tenderize their cuts. Whole subprimals cryovaced are not blade tenderized. Even if a brisket was blade tenderized you will be cooking it beyond well done, so no concern of bacteria being driven into the meat during tenderizing. A steak you cook to only 125*, different story.

    Local Costco here has prime packers running at $2.69-2.79/lb of late.  As noted in another thread, the cost of beef has been slowly dropping for the past several months.  Local Kroger only sells flats (choice) and they have been at $5.99/lb for the past year.
    @Wanasmoke - Nice score.  I run fat side down and I think you will be fine.  If possible, just cut a small notch on the flat end across the grain before it goes on so when it becomes a meteorite you know how to slice when ready to serve.  Give the Aaron Franklin brisket payoff video a look to demystify how to slice.  FWIW-
    Louisville; Rolling smoke in the neighbourhood.  Life is too short for light/lite beer!  Seems I'm livin in a transitional period. CHEETO (aka Agent Orange) makes Nixon look like a saint.  
  • That seems about correct for our Costco.  It is a versitale cooking cut of beef.  This is one of cuts that have been put on family rotation when we slaughter a steer.

    Thanks @lousubcap - I watched that video last night and it makes complete sense.  I was laughing out loud though because @SGH had posted a video where some guy completely hacked off all the bark and fat before slicing...he was appropriately shamed =)
