I have crappy connectivity, or I would have loaded a pic of my current cook.
We are on a chartered sail boat moored at the Bitter End Yacht Club at Virgin Gorda in the BVI. I roasted 15 leg quarters from commercial hens grilling on what can only charitably be called a grill in the stern rail of the boat.
Regardless of of their humble supply chain, the legs have been generously coated with kosher salt and 20Stone Rub (freshly ground black pepper, cayenne, ground garlic, ground onion and paprika). I found lump, which was lit using a generous dose of Kingsford's finest accelerant (oh, the sweet smell). They were roasted to 170 internal (yes, I travel with a Thermapen) given their questionable provenance.
Tomorrow, the wind forecast is great, and I can't wait to get back under sail. I'll post pics when we have a better connection.

Was in the BVI last week, and at BEYC for New Years Eve. Winds were howling Christmas week; forecast was much better for your trip than mine.
Regardless: Paradise > Crappy Connectivity. And it all beats being back home riding the desk.

I'm envious! I've been trying to get out on the water but the weather's (along with work) been killing all my attempts. At least I can cook chicken quarters on a decent grill
