Finally I got to break in my Christmas present

I had the new large BGE assembled on Christmas Day but between the rainy weather (downpours) here in the Midwest and other family events I was unable to do a cook. Last night was my first attempt and we decided to smoke four racks of baby backs. Not sure if I will get the pictures posted correctly or not but here we go:

Probably won't look this clean ever again. I added two chunks of apple and cherry wood to the pit after the lump was fairly hot. Is that the right time?


And the ribs were prepped and dusted with Deez Nuts Pecan rub. 


After much research I did the 2-2-1 method of cooking and during the foil squeezed some Parkay and sprinkled with brown sugar. Here they are on the grill in a V rack. 


What is the best setup for cooking multiple racks on the large? During the foil stage I just stacked them on top of each other and in the last hour with sauce I laid them flat across the grates but they had to overlap in areas. And the finale:


Let me say that everyone was a huge fan. I can't wait for the next cook - a couple of simple spatchcock chickens. -joe

    Dang, home-run right there.
    Welcome aboard and enjoy the journey.  There are about as many ways to cook ribs as posters.  Given you had success then make minor adjustments off that and keep eggsperimenting.
    Louisville; Rolling smoke in the neighbourhood.  Life is too short for light/lite beer!  Seems I'm livin in a transitional period. CHEETO (aka Agent Orange) makes Nixon look like a saint.

    P.S. Feel free to add a bit more charcoal. Don't be afraid to cover the joint between the firebox and the fire ring. You might need it on longer cooks.

    Nice cook. Don't he afraid to load the egg with more lump. Longer cooks I load it well into firering. Just FYI. Nice first post.

    Its always a debate around here to foil/not to foil so next time give the ribs a cook without foil and sauce at the end.  Lots of eggsperimenting to do.

    Looks great! I cook multiple racks in a holder like yours. I don't bother with foiling and I'll cook them pretty hot and fast. Ribs can tolerate a lot as long as you don't run so hot that you burn sugar in the rub or sauce.

  • After trying multiple ribs methods, I'm a 5-0-0 or 6-0-0 method man. I also don't use the vertical rib rack either. I like the adjustable rig now. I do 4 full racks at a time, 5hrs smoked for baby backs, 6hrs for st Louis style, give or take some time for both. I usually sauce for the last half hour to set the sauce. Way easier than foil and perfect smoke, great bark.

    This is what I do, but play around and have fun. This will be your best Christmas present ever! BBQ/grilling is about the journey. I have had more fun grilling, cooking , and smoking, than ever. I have more parties and have more family and friends over than ever.

    Having been born in Iowa and grown up in Missouri I was always taken by the lines in movies whereby when asked "where are you from?" the standard response line was always "from a small farm in the mid-west - Ohio to be exact!"
