Room for another Rib Roast post?
Cooked this 8lb Rib Roast at 250 for about 2-1/2 hours, pulled at 120 and rested for 20 minutes. Seasoned with kosher Salt and Pepper. Perfection!

You pulled at 120 degrees. What was the temp 20 minutes later ??? Did it keep cooking ??? Looks great, I was wondering if 120 was a little on the rarer side. Awesome job. Please let me know.
