We have a bumper crop of good lard this year and would take us forever to use it all. If you are making tamales or just want some lard and are fairly local, let me know and I'll meet you somewhere. This is all from Berkshire bellies and hams.

we don't deep fry a lot but I hit stuff out of the SV in a larded pan to get a sear on it. better than veggie oil and has a very high smoke point. we do use it in pie crusts quite a bit and we make a ton of tamales this time of year. Tex_mEx Christmas and allbgebrent said:
