Baked Beans for 40 folks

Been tasked with cooking baked beans for 40 folks next week.  Have never cooked for that many and don't want to miss the mark.  Anyone have a go to recipe for baked beans to go with BBQ and slaw for that many??  need some help!!!  Want it to be top shelf like I expect the BBQ to be.

    Ramp this up for 40...It's awesome...

    Keri's Hog-Apple Baked Beans

    3 or 4 slices bacon, diced
    2 28-oz cans Bush's Baked Beans – Drain and rinse beans.
    1/2 c. Blues Hog BBQ Sauce (or other sweet-spicy favorite)
    1 lb. smoked leftover smoked pork or beef, more or less, or 1 lb
    crumbled cooked pork sausage
    1 can apple pie filling
    1 medium onion, chopped
    1/2 green pepper, chopped
    1/2 c. brown sugar
    2 Tbsp. Worcestershire sauce
    2 Tbsp. Mustard (prepared)
    1 tsp chipotle or cayenne powder (optional, to taste*)
    1 tsp Blues Hog barbecue rub (or your favorite de jour)

    Brown bacon, and saute onion and green pepper in bacon grease. Mix in
    remaining ingredients. Bake at 325º for 1 hour, or simmer on stovetop
    in large pot for 30 minutes if you don't have time to do them in the
    oven. Serves 12.

    This sounds really good @ Photo Egg, the apple pie filling sound intersting.  Agree just quadruple this and you should be good.  I think you may have a little left over, but to have some left over then not enough.  I would if @badinfluence has a large recipe that he uses on his food truck.

    I like to do these. I double it and it does a whole sheet pan so quadruple it and it should be plenty. http://bbqblog.com/?p=30

    Lit, that recipe is real close to one that Old Dave posted on the Backwoods forum many years ago. It's a good one for sure. Sadly the Backwoods forum was shutdown last year. Old Dave is on the Brethern but he never posts there for some reason.

    Curiosity got the best of me after posting the above. I went to Backwoods and it looks like the forum is back up and running. Fixing to see if my old log in info still works.

    Just buy your beans in a can and look to see how many servings are shown on the back. Go over a little and you should be fine. Make the beans as per your recipe once you have quantity down.

    back in the early 1990s, my wife was in Washington DC working with a US senator, and she had to go to briefings about methane gas output from herds of beef cattle, what the effect was on greenhouse gasses, etc.

    she felt a little self conscious at the time briefing the senator on the causes/effects of bovine flatus and its potential effect on methane levels in the atmosphere.  this was back when the senate actually investigated stuff and took science seriously, even if it sounded funny ("sounded funny".  get it?)

  • The "Grillin' Beans" by Bush are pretty good.  I'd just buy a bunch of those and doctor them up personally.

    I made this recipe for my Super Bowl party and everyone loved it. You could triple it (or more) and make it on the Egg fairly easily.
