Believe it or not I've never made bacon wrapped filet mignon. I started the process by making some herb butter.
2.5 sticks of unsalted sweet cream butter, roasted one clove garlic, chopped fresh rosemary, sage, thyme & a little coarse kosher salt and cracked pepper. Placed onto cellophane to form up 2 logs. Used a plastic butter dish to form this one. Refrigerated for several hours. And the 2nd log went into the deep freezer for future use.

The filets are from a beef tenderloin I steaked out a few weeks back.

Getting the CI pan ready for the sear.

Served with baked potato and steamed broccoli.

And this just in on Peyton. I was more disappointed that Kobiak played him knowing he wasn't close to 100%. Go Broncos!!! Hope he can heal enough to play later in the season but, more so so he isn't in pain. That's a tough injury for a QB. I'd say it's just as bad as turf toe.

Looks fantastic. Great job on the cook and the butter. We don't get to see many Broncos games on the East coast other than highlights and I hated to see what happened to Peyton. But big congrats on his record. We're big Broncos fans. Did get to see Eli play and the refs should have been drawn and quartered as we say down South.

@DoubleEgger Shut your dirty mouth. LoL. His record speaks for itself. His last two games a blind man could see he's hurting. Why play him only you risk further injury. The beginning of the season he had to transition from running his offense to running what Kubiak wants.

The compound butter only took a few minutes to make and adds so much in the end.
I'm gonna do a couple of different ones w/ variations in herbs...maybe some basil, tarragon, etc for different items like seafood, chicken, bread...

how did the butter turn out? I did some recently that had too much garlic, a bit overpowering -
@slovelad No influence. Sorry, I didn't see your post on this. I've made the butter several times. It's real good on steak, chops and some veggies. The ratio of garlic is key. Also I roast it, simmer in butter and lastly smash it and sift into the mix removing the large chunks of garlic. Nothing wrong with a plate of food like that. I don't eat filets often myself. I too prefer a ribeye or NY.
