Yardbird and Nola Spuds

Got back on the horse and spatched another bird tonight. Turned out well. I think the air chilled birds are the way to go. Bird was rubbed with a local rub, Grand Champion BBQ Dirty Bird.
Decided to make some of @nolaegghead 's "Nola's MF-ing Spuds". I substituted Boars Head Smoked Gouda and BH Gruyere instead of cheddar. It was off the chain good!

Looks like a winning combination doubledildolopolis, my brother. I have SWMBO bugging me for the recipe...we had some people over and it's just one of those simple recipes that you can do all kinds of things with (cheese, spice, orientation of potatoes, etc). I told her to hold her horses, it's on the forum, but I'll print out my stolen recipe with a few modifications.
