    Are you using a smoker tube?  If not, would you mind please describing your method?

    I've got a smoker tube on order and am looking forward to smoking a batch of cheese next week.

    I use the A-maz n Smoker Tray 5 X 8.  Just started using the Kish Ash basket, so it was very easy to remove all of the lump.  I use apple pellets, light on one end of the tray with my looflighter until there is a flame, place on the fire grate and wait about 10 minutes.  Platesetter, legs up, grate and then a Q-Matz.  The Q-Matz come in a rectangle, I just cut them to fit all of my grates.  They work great for cheese, fish, etc.  I smoked for two hours.  Bottom vent 1/2 way open, smokeware cap 1/2 way open.  This time I put in a tray of ice on the platesetter which worked great!  The outside temp was 70, temp of my grate was 62 throughout the cook with most of the ice still there when I finished.  Then into Foodsaver bags.  I find that a 2 week wait is the minimum, but 4 weeks is better.  I am just finishing the batch from last year and the cheese is fantastic!

    Looks good! I'm waiting for it to be a tad cooler before I smoke some cheese. 

    I did something similar last year. I saved some of the ice that was left. I used a smoked cube every now and then in my bourbon, and it was not bad. Like the cheese, the smoked cubes seemed to mellow out after being in the freezer for a week or two.
