beef ribs are popular today it seems.
these are from Sam's Club, two singles that I trimmed from the two racks of three
heavy coating of garlic and Red-eye Express, then on to the egg at 275, raised indirect with some oak and pecan.
190 and all jiggly right now, I'm going to let them go a little longer to render out a little more fat, will probably pull them for tacos

I am in. Tomorrow I go to Wegman"s for the first time and I am getting beef ribs. Been wanting to try them for a while now....many posts today must be a sign.Large Big Green Egg in a nest. North Shore of Boston.

These turned out great. I meant to get some cotija cheese which would've been better, but I forgot.
Taco pic sucks, and I chopped more than I pulled, but here's the finished cook.
