First time using '00' flour for pizza

I just picked up my flour at Gordon Food Service: $42.99 - #55 Caputo 00 (Blue Bag). If your local GFS does not have it on the shelf they will order it.IL

Thank you for your offer, but as someone who mails a lot of packages I know the postage would more than double the cost of any flour I bought from you. @RRP, when I want thin crisp crust I just use the 00 flour and no APF. My dealer sells this 00 flour and it is great and easy to use. You can even make some up and freeze it to have it on hand for a later date.RRP said:OFFICIAL DUMB Questions Time!
